Today we are going to learn how to stuff and jar sun-dried tomatoes with basil and garlic. To make these from scratch, it’s as simple as cutting the tomatoes in half vertically and salting them to keep off bugs when left outside to dry in the sun for a couple of days. Typically, sun-dried tomatoes are prepared in the summer months when the sun is most intense. You can also buy the tomatoes ready prepared dry (like in my case). In Italy, most people make them fresh from the garden, like how I used to with my Nonna. Once you have your tomatoes ready, let’s get to stuffing them!
- Sun-dried tomatoes
- Extra virgin olive oil
- Open and spread your sun-dried tomatoes as best as possible.
- Cut the garlic in thin slices.
- Fill 1/4 of a glass jar with extra virgin olive oil.
- Put one basil leaf on each side of the tomato.
- Put two pieces of garlic in the center and close the tomato like a sandwich.
- Fill the jar with the stuffed tomatoes and some whole basil leaves. As you fill up the jar, top off it off with olive oil.
- Make sure to pack the jar tightly and continuously press them down using a fork.
- Once the jar is full, layer it with extra basil leaves, garlic slices, and olive oil.
This is a straightforward recipe to make sun-dried tomatoes stuffed with garlic and basil, which are an excellent addition to your antipasto, pasta, or sandwich. It also serves as a wonderful bonding activity to be done with close friends and family.
